Story of Seasons: Olive Town's Crop Pioneers are a bit different than most previous SoS/Harvest Moon games. There's more variety with each season, many crops can grow for multiple seasons, and Marvelous has even adjusted the prices of some commodities while changing how you increase value.

Pioneers of Olive City Crops Bases
The pioneers of Olive Town are moving away from fertilizers and combining the quality of the harvests with your work in the field. There is no need for fertilizers, which is why stores do not stock them. If you plant and nurture even a few batches of crops in your first spring, that should be enough to increase their value to three, which is a nice boost to your profits.
You can also improve your fieldwork level by plowing random squares you don't plan to use and using the hoe in the mines.
Some of Olive Town's most valuable crops grow wild on your farm. Be sure to harvest and sell them, as it unlocks their seeds to purchase from the General Store.
Lastly, you'll also unlock sprinklers incredibly early in the game. It's worth using materials to craft sprinklers and saving stamina if you want to maximize your crop yield as soon as possible.

Pioneers of Olive Town gives the humble turnip a boost and tweaks a few others. You'll find onions in the first farming area shortly after starting, and although they only give you one onion per harvest, the selling price is worth it.
Strawberries can be found in the second area of your farm, where your first barn is, but garlic can only be obtained from the store after reaching level nine in the fieldwork.
Cucumbers aren't worth the stamina to care for them, not when turnips exist. Potatoes have been nerfed slightly, so even when you get double or triple your harvest, it's not that profitable.

Pumpkins are the summer onions for the price of turnips, so dedicate a few fields to them. You'll find your first melon in the second area of the farm once summer begins, and you'll need to ship it before the store carries seeds.
Corn is fantastic and offers much more value for your effort than tomatoes, while pineapples are the season's biggest hitters aside from watermelons. You'll get watermelons at level nine from fieldwork, but the exorbitant cost of seeds makes returning less worthwhile than these.

Fall is devoid of high-value crops, but sweet potato will treat you well. Carrots are great spot crops, but if you're saving money, spinach is the way to go. Supplement them with some melon fields and you will be well prepared for winter.

Cabbage is the best winter crop, but you need to go through your first farm to find one and unlock seeds. You can potentially find one in the spring, although I haven't come across any. Leeks are in the third agricultural zone, and those plus daikon radishes are the best bets for steady income.
